Smoked Salmon

A movie/date night needs to be special and relaxing without a lot of fretting and labor intensive cooking. This is one of our favorite ways to spend a quiet evening together watching a movie.

  • 1 package of smoked salmon (4oz)
  • 1/2 red onion, finely diced
  • 3 tbsp capers, non-pareil (the smallest size) drained
  • 1 lemon, sliced into thin wedges
  • 1 package of cocktail rye or pumpernickel
  • 1oz freshly grated ginger
  • 2oz fresh dill, finely chopped
  • 2oz fresh cilantro leaves, finely chopped
  • 4oz coarse grain mustard
  • 1 tsp real honey
  • 6oz softened cream cheese


*In separate ramekins or other small bowls, place the ginger, dill, cilantro, capers, red onion and mustard.

*Into the mustard, drizzle honey while stirring, then sprinkle in the cumin and stir again.

*Divide cream cheese into three ramekins, then, to one, add grated ginger and stir well, then, into another, add a pinch of dill and stir wile squeezing a few drops of lemon juice in. Leave the third plain arrange cocktail pumpernickel on a baking sheet, brush lightly with olive oil, place on a low rack in the oven, set on broil for 2-3 minutes (ovens vary dramatically, so keep an eye on it, you want the tops crisp but the underside to stay soft) with door ajar. remove and set aside covered with a cloth (do not put in a bag or closed container till fully cooled)

When it’s “Movie Time,” arrange the sliced salmon on a platter with a couple of small forks. (hint, you may want to cut the salmon to fit the toasts) arrange lemon wedges and ramekins. Set a cloth napkin to each side of the platter, place the appropriate small spoon, fork or spreader for each ramekin. Place toasts in a cloth lined bread basket or arrange on the platter. Have Champagne flutes staged and a chilled bottle of Duval-Leroy in an ice bucket ready to pop & pour! So pop in your movie, pop the cork and enjoy your evening! Be creative! Make toasts for each other, surprise one another with the various possibilities of succulent sensual delights…and always sip that beautiful bubbly.

For “Dessert”

Allow cheese to come to room temp (it can be warmed in the oven in you like) To serve, spread cheese on toast or cracker and drizzle with honey. The key is to place this in your mouth (on someone’s mouth) upside down, so the first flavor/texture to touch the tongue is honey…Much fun to be had sharing this one!

What would a movie night be without popcorn? Black Jewell popcorn (buy the kernels if you can find them and pop according to directions. Otherwise, buy the microwave “Natural” version. The kernels pop up small and crispy crunchy and with less hulls than most.

When kernels have ceased popping pour into a bowl and drizzle lightly with melted butter. Stir then sprinkle lightly with finely ground Parmesan cheese, salt and pepper. Toss again and dig in! Popcorn and Champagne is a perfect pairing! Happy movie night to you all!
